Just a basic question but did any ute/van come out with disk break rear end? I have drums on my HJ pano and would like to go to disk if possible, is there room for disk with the leaf springs there?

No vans or utes came out with disk brakes afaik
you can put rear disk on no problems

So what would it take to do that would you know, is it as easy as taking the parts off a disk break diff and bolt onto mine or bit mor than that. I did read once the axles had to be changed too but then I did read the springs would be in the way too
From memory Statesman rear disc conversion and it should all bolt straight up to Salsbury diff housing its been so long i have played with these things but getting back into it now

Why do you want rear discs ??
It is not a simple bolt-on job.
Yes, the axles & complete brake assemblies will swap from a disc rear to a drum, the housings are the same.
The big drama (also why GMH didn't offer the option) is that the handbrake lever on the inside of the caliper, fouls the leaf springs.
I've fitted rear discs to my HZ B06 One-Tonner & I've had to fit lowering blocks & also re-drill & rotate the caliber mount relative to the diff housing.
Very fiddly but it is do-able.
You always hear " yes, no problems my mate did it to his panno". When you actually check it out they never seem to have a working handbrake.

Honestly unless you're circuit racing (or drive on the road like you're on a circuit) and need to reduce brake fade for hard stops every 20 seconds the drums will do fine
If drums are as good why are newer cars got disk all round, Utes wagons ect? I'm running a 350 chev and was always to the belief that you put more power in the brakes have to go with that too
